Fudge Meltaways



1/2 c butter
1 sq unsweetened chocolate
1/4 c granulated sugar
1 tsp vanilla
1 egg, beaten
2 c graham cracker crumbs
1 c coconut
1/2 c chopped nuts
1/4 c butter
1 Tbsp milk or cream
2 c sifted 10x (confectioner's) sugar
1 tsp vanilla
1 1/2 sq unsweetened chocolate

Melt 1/2 c butter and 1 square chocolate in saucepan.  Blend granulated sugar, 1 tsp vanilla, egg, crumbs, coconut and nuts into butter-chocolate mixture.  Mix well and press into ungreased 9x9 baking dish; refrigerate.

Mix 1/4 c butter, milk, 10x sugar and 1 tsp vanilla.  Spread over crumb mixture.  Chill.

Melt 1 1/2 square chocolate and spread evenly over chilled filling.  Chill again.  Cut into tiny squares before completely firm.

Coconut-Chocolate Meringue Bites



3/4 c butter
1/2 c packed brown sugar
1/2 c granulated sugar
3 eggs, separated
1 tsp vanilla
2 c flour
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
6 oz semi-sweet chocolate pieces
1 c flaked coconut
3/4 c coarsely chopped nuts
1 c packed brown sugar

Heat oven to 350.  Grease a 9x13 pan.  Mix butter, 1/2 c brown sugar, granulated sugar, egg yolks and vanilla.  Beat 2 min at medium speed on mixer.  Blend flour, baking powder, soda and salt together; mix in thoroughly.  Spread or pat dough in pan.  Sprinkle with chocolate pieces, coconut and nuts.  Beat egg whites until frothy; add 1 c brown sugar gradually; beat until stiff.  Spread over nuts.  Bake 35-40 min.  Cool; cut into bars.

Chocolate Crinkles


1/2 c vegetable oil
4 sq. unsweetened chocolate, melted
2 c sugar
4 eggs
2 tsp vanilla
2 c flour
2 tsp baking powder
1/2 tsp salt
1 c 10x (confectioner's) sugar

Mix oil, chocolate and sugar.  Blend in one egg at a time until well mixed.  Add vanilla.  Measure flour and sift with baking powder, and salt into oil mixture.  Chill several hours or overnight.

Heat oven to 350.  Drop teaspoonfuls of dough into confectioner's sugar.  Roll in sugar; shape into balls.  Place about 2 inches apart on greased baking sheet.  Bake 10 to 12 min.  DO NOT OVERBAKE!

Chocolate Chip Blondies

1½ c packed brown sugar
½ c butter (no substitutes), melted
2 eggs, beaten
1 tsp vanilla extract
1½ c flour
½ tsp baking powder
1 c semi-sweet chocolate chips
½ c semi-sweet chocolate chunks

In a large bowl, combine brown sugar, butter, eggs and vanilla just until blended. Combine flour and baking powder; add to brown sugar mixture. Stir in chocolate pieces. Spread into a greased 9x13" baking pan. Bake at 350° for 18 to 20 minutes or until a toothpick inserted near the center comes out clean. Cut into squares.

Yield: 3 dozen

Coconut Macaroons


1 pkg. (14 oz.) Baker's Angel Flake Coconut
2/3 cup sugar
6 Tbsp. flour
1/4 tsp. salt
4 egg whites, lightly beaten
1 teaspoons almond extract

Preheat oven to 325 degrees. Combine coconut, sugar, flour and salt. Add egg whites and extract; mix well. Drop by tablespoonfuls, 2 inches apart, onto greased and floured baking sheets.Bake 20 min. or until edges are golden brown. Transfer to wire racks or waxed paper. Cool.

Cake Mix Cookies

One 18.25 ounce box chocolate cake mix
1 stick butter, softened
1 egg
3 tablespoons water

Combine all ingredients and beat with electric mixer until well combined. Drop by spoonfuls onto ungreased cookie sheet and bake at 350 degrees for 9-12 minutes.

Allow to rest on cookie sheet for 2 minutes before moving to cooling rack. If desired, spread chocolate frosting, peanut butter, etc. between two cookies and lightly press to form sandwiches.

Cakey Chocolate Chip Cookies - New Dieter's Cookbook


1 c rolled oats
1/2 c butter, softened
1 c packed brown sugar
1 tsp baking soda
1/4 tsp salt
1 8-oz container low-fat yogurt
2 eggs (I used egg substitutes)
1 tsp vanilla
2 1/2 c all-purpose flour
2 c semisweet chocolate pieces (12 oz)

Place oats in a shallow baking pan. Bake in a 375 degree oven about 10 minutes or until toasted, stirring once. Place oats in a food processor bowl or blender container. Cover and process or blend until ground; set aside.

In a large mixing bowl beat butter with an electric mixer on medium to high speed for 30 seconds. Add brown sugar, baking soda, and salt; beat until combined. Beat in the yogurt, eggs, and vanilla until combined. Beat in as much of the flour as you can with the mixer. Using a wooden spoon, stir in the oats and any remaining flour. Stir in chocolate pieces. (My mixer mixed up everything, including the oats, without a problem).

Drop dough by rounded teaspoons 2 inches apart on an ungreased cookie sheet. Bake in the 375 degree oven for 9 to 11 minutes or until bottoms are light brown. Transfer to a wire rack to cool. Makes about 60 cookies.

Sugar Cookies


Cream:
1 c shortening
1 c granulated sugar
1 c brown sugar

Add 3 eggs, one at a time.

Mix together:
4 c flour
1/2 tsp salt
1 tsp baking powder

Stir until it foams:
1 c buttermilk
1 tsp baking soda
1 tsp vanilla

Add milk and flour alternately.

Bake at 375 for 10-13 minutes.

Chocolate Chip Cookies


2/3 c butter
2/3 c shortening
1 c sugar
1 c brown sugar
2 eggs
2 tsp vanilla
3 1/4 c flour
1 tsp baking soda
1 tsp salt
1 bag (12 oz) chocolate chips*

Preheat oven to 375. Cream butter and shortening and two sugars together. Add eggs and vanilla. Beat until combined. Add flour, 1 c at a time. Add baking soda and salt with final 1/2 c. Stir in chocolate chips. Bake at 375 for 12 minutes. Cookies will seem underdone when first removed, but will set as they cool.

Yield: 4 1/2 dozen small cookies

*I kept the amount of chocolate chips the same as the double batch - we like chocolate!

Monster Cookies


1/2 c butter, softened
1 c sugar
1 c plus 2 Tbsp firmly packed brown sugar
2 c peanut butter
3 large eggs
1 tsp light corn syrup
1/4 tsp vanilla extract
4 1/2 c regular oats, uncooked
2 tsp baking soda
1/4 tsp salt1 cup candy-coated chocolate pieces (aka m&m's)
1 c semisweet chocolate morsels

Beat butter at medium speed with an electric mixer until creamy; gradually add sugars, beating well. Add peanut butter and next 3 ingredients; beat well. Add oats, soda, and salt; stir well. Stir in chocolate pieces and morsels. (Dough will be stiff.)Pack dough into a 1/4-cup measure. Drop dough 4 inches apart onto lightly greased cookie sheets. Lightly press each cookie with fingertips into a 3 1/2-inch circle.

Bake at 350 for 12 to 15 minutes (centers of cookies will be slightly soft.) Cool slightly on cookie sheets; remove to wire racks to cool. Yield: 2 1/2 dozen

We like to make mini-monster cookies - This way, I get 5 dozen and I don't feel as guilty giving one to my cookie monsters! :D
