Chocolate Chip Pie

2 eggs
1/2 c flour
1/2 c white sugar
1/2 c brown sugar
1/2 tsp vanilla
1 c butter, melted and cooled to room temp
1 c chocolate chips
1 c chopped pecans
9" pie shell (the recipe suggested a store bought shell, I used my pie crust recipe)

Preheat oven to 325 degrees. Beat eggs until foamy, beat in flour, sugar, brown sugar and vanilla until well blended. Blend in melted butter. Stir in chocolate chips and nuts. Pour into shell. Bake for 1 hour. Remove from oven. Serve warm.

Creamy Pear Pie


1/3 c white sugar
2 Tbsp all-purpose flour
4 c peeled and sliced pears
1 c sour cream
1/2 tsp vanilla extract
1/2 tsp lemon extract
1/2 tsp almond extract
Pie crust (see my recipe here)

Topping:
1/4 c all-purpose flour
2 Tbsp brown sugar
2 Tbsp butter, melted
Preheat the oven to 400 degrees F.

In a large bowl, stir together the white sugar and 2 tablespoons flour. Add pears, and toss to coat. Stir in the sour cream and vanilla, lemon and almond extracts until the pears are evenly coated. Pour into the unbaked pie shell.

In a small bowl, mix together 1/4 cup flour and brown sugar. Mix in the butter with your fingers until the mixture is crumbly. Sprinkle evenly over the top of the pie.

Bake for 10 minutes in the preheated oven, then reduce the temperature to 350 degrees F. Bake for an additional 45 minutes, or until pears are tender.

Joy of Cooking Basic Pie Dough


For a double-crust 9-inch, or a single-crust pie with a generous lattice, use the following amounts. For a one-crust 9-inch pie, use half the recipe.

Sift together:
2 c all-purpose flour
1 tsp salt

Measure and combine:
2/3 c chilled shortening
2 Tbsp chilled butter

Cut the butter into the flour mixture with a pastry blender. Add half of the shortening and continue blending until it has the grain of cornmeal. Cut the remaining half coarsely into the dough until it is pea size.

Sprinkle the dough with:
4 Tbsp cold water

Blend the water lightly into the dough. You may lift the ingredients with a fork, allowing the moisture to spread. If needed to hold the ingredients together, add:
1 tsp to 1 Tbsp water

When you can gather the dough up into a tidy ball, stop handling it.

**Place between wax paper and use hands to flatten. Place in refrigerator to chill until needed. I found putting it in the fridge after flattening it makes it roll out very nicely.

Strawberry Pie

1 1/2 c Bisquick
1/4 c butter
3 T boiling water
4 oz cream cheese
1/4 c 10x sugar
1 c cool whip
1 box Danish dessert, strawberry
1 1/2 qts sliced strawberries

Mix first 3 ingredients together and pat in 10" pie dish. Bake at 325 for 10-15 minutes. Mix next 3 ingredients and spread into cooled crust. Bake Danish Dessert according to box and cool. Add strawberries and add to pie. If you double the recipe, it fills a 9x13 pan.
