Pork BBQ

4-5 lb pork roast
1/2 c celery
2 lg onions
1/4 c vinegar
2 Tbsp mustard
1 c sugar
1 (28 oz) bottle ketchup
2 bottles chili sauce
salt and pepper
water

Place roast in pan on stove to brown top and bottom before putting in the crockpot. Leave in crockpot for 7 hours on low. Put next seven ingredients (celery to chili sauce) in large kettle. Turn burner on low and add pork as you pull it off the roast. (It shreds easy with a fork).

Add salt and pepper to taste. Add water for consistency, if needed. Let simmer for 1-2 hours so onions and celery can soften. You can put it back in a clean crock pot to simmer.

Serve on rolls or a slice of bread (if you're [ahem] out of rolls).

Nothing like a good bbq. I usually use beef. I'll have to try this with pork sometime.
